Cool Summer Gazpacho!

For those of our readers here in Houston I’m sure you’ve noticed it’s getting hot in a hurry as the summer months approach. Cool down with this delicious, healthy and yeast-free gazpacho! It also makes a great appetizer for summer parties: just serve in a shot glass and garnish with a cherry tomato or even a boiled shrimp!
Ingredients
- 4 cups of tomato juice
- 1 red onion, minced
- 1 yellow, green or orange bell pepper, minced
- 1 cucumber, diced
- 2 cups of chopped tomatoes
- 1 clove of minced garlic
- 3 tablespoons of fresh lemon juice
- 2 tablespoons of red wine vinegar
- 1 teaspoon of basil
- 1 teaspoon of parsley
- ¼ teaspoon Stevia
- Salt and pepper to taste
Directions
In a blender (I use a Vita-Mix) combine tomato juice, onions, bell pepper, cucumber, tomatoes, garlic, lemon juice, vinegar, basil, parsley, Stevia, salt and pepper. Blend until well combined but still chunky. Chill for 2-3 hours, then garnish with fresh parsley, cherry tomatoes, or boiled shrimp if desired, then serve!
